Analysis of Beer and Hop Antioxidants
Abstract
This work is focused on the determination of antioxidant activity of polyphenolics in hop and beer. Methods based on their radical-scavenging activity and ferric reducing antioxidant power were used for the purpose. All the methods were optimized and applied to hop extract and beer samples. The results obtained by different methods were compared and discussed.Downloads
